Flap Steak

The flank steak is a type of beef cut located between the back and the rib of the animal and is a cut of meat. This cut of meat is long and thin, ideally prepared in barbecue skewer and served medium rare. It must be cut into thin pieces and its fat must be removed when serving. When prepared for barbecue, it usually has a golden crust on the edges, while the middle remains pink.

Cooking suggestion:

The preparation of Fraldinha is very simple – just skewer your slab of meat, salt heavily on both sides using rock salt or course kosher salt, place directly over the hottest part of the fire for a few minutes on each side, brush the excess salt off, then cut in thin slivers against the grain.

A fraldinha também chamada de bife do vazio, ou vazio, é um tipo de corte de carne bovina. Está localizada entre a parte traseira e a costela do animal e é um corte de carne tradicionalmente usado para churrasco. Esse corte de carne é longo e fino, idealmente servida mal passada ou ao ponto. Deve ser cortada em pedaços grossos e sua gordura deve ser retirada na hora de servir.

Quando preparado para churrasco, geralmente apresenta uma crosta dourada nas bordas, enquanto o meio permanece rosado.
